Asian Style Coleslaw

PREP TIME: 10min

SERVES: 6

INGREDIENTS:

  • ½ Red cabbage, thinly sliced

  • 3 carrots, shredded

  • ½ cup pomegranate seeds

  • 2 tbsp olive oil

  • 1 tbsp soy sauce

  • 1/2 cup balsamic vinegar

  • 2 sprigs parsley (optional)

  • ½ tsp salt


METHOD:

  • Step 1: Place the washed cabbage and carrots in a large salad bowl.

  • Step 2: Add the pomegranate seeds.

  • Step 3: Dress the salad with olive oil, soy sauce, balsamic vinegar and salt.

  • Step 4: Toss all ingredients together to combine well.

  • Step 5: Garnish with parsley (optional) and serve.
