Baked Salmon Patties

PREP TIME: 10min

COOK TIME: 20min SERVES: 4

INGREDIENTS:

  • 415g can red salmon, drained and flaked

  • 1 cup breadcrumbs

  • 1 egg, lightly beaten

  • ½ cup parmesan, grated

  • ¼ cup fresh parsley, finely chopped

  • 1 tsp garlic, minced

  • ½ tsp salt

  • ¼ tsp ground pepper

  • Spray olive oil


METHOD:

  • Step 1: Preheat oven to 180°C. Line a baking tray with baking paper and spray oil.

  • Step 2: Mix all ingredients in a mixing bowl.

  • Step 3: Roll 2 tablespoons of mixture into a ball and slightly flatten into a patty shape.

  • Step 4: Place the patty onto the lined baking tray.

  • Step 5: Repeat this method to create 8 patties on the tray.

  • Step 6: Spray patties with oil and place in oven.

  • Step 7: Bake for 15-20 minutes.
