Easy Fried Rice

PREP TIME: 5min

COOK TIME: 25min SERVES: 4

INGREDIENTS:

  • 450g microwavable white rice

  • 2 cups mixed frozen vegetables (corn, carrots, peas)

  • 2 spring onion, thinly sliced

  • 50g bacon, diced

  • 2 tbsp vegetable oil

  • ¼ cup water

  • 2 tsp soy sauce

  • ½ tsp ginger powder

  • ½ tsp garlic, minced

  • 1 egg, lightly beaten

  • Salt

  • Pepper


METHOD:

  • Step 1: Heat the vegetable oil, water, ginger and garlic in a large non-stick frying pan over medium heat.

  • Step 2: Meanwhile, steam the rice in the microwave as per packet instructions.

  • Step 3: In the hot pan, fry the vegetables and bacon for 5 minutes and then push mixture to one side of the pan.

  • Step 4: Lower the heat and add the beaten egg to the empty side of the pan to make a pancake. Cook both sides of the egg pancake and then slice up the egg in the pan. Toss the sliced egg through the bacon and vegetables.

  • Step 5: Add the soy sauce to the pan, followed by the spring onions and steamed rice. Fry the rice with the other ingredients for 3 minutes.

  • Step 6: Season fried rice with salt and pepper to serve.
